A healthy switch
So after binging on mini chocolate bars for the last week (I really have no self control over chocolate in the house-I just don't buy it, but when my kids bring home buckets full of candy from Halloween, I had to help them eat most of it), I decided I HAD to start eating healthier. I found a cookbook from the library from Zonya (a great nutritionist who has a healthy cooking show. I loved the looks of about every recipe in the book, and got excited about eating this new healthy way. She uses lots of veggies, and makes things that actually sound great, and are so easy to make. In the recipe book it calls for ground chicken a few times, and I have also seen Rachael Ray use this a lot but could never find it in the grocery store. I wondered if I could just grind chicken breast myself to make it. After searching on the internet, I found that you can just grind up chicken breast yourself and use it in place of hamburger. Albertsons has chicken breast for 1.29 this week, which is a way better price than hamburger, so I tried grinding it, and we all loved it. I made poor boy sandwiches with ground chicken breast, diced green peppers, onions, and mushrooms, and then threw in some spinach for a few minutes at the end. I seasoned it with seasoning salt, and didn't use any oil or butter at all-just cooking spray for the chicken. We put a little cheese on top, and ate them on those super thin wheat bun type things, and they were so yummy. The kids also loved the oven fries (half white/half sweet potatoes) I am going to try ground chicken in many new recipes. I also read that the butcher will grind it for you if you ask, which would make it so easy. I thought I'd share this new discovery with you all. I'm sure it would be good in meatloaf, and lasagna too. Give it a try! And your idea of self control sounds exactly like mine! Unfortunately that means I don't bake very many fun things for Scott...I'll have to get better!
I CANNOT wait to come over & hopefully delight in your cooking talent. Those sweet potato fries sound delicious.
I also hear that you will be making your way to the Nevada homestead for Thanksgiving. Yipee. You'll definitely help liven up the lonely desert.
I hear it will be pretty fantastic, at least from mom's point of view. Everytime I try talking to her she rushes off the phone with the "I'm so busy planning a kids carnival" excuse.

Yes, I'll homeschool when we get to CA in a month. I'm so excited with this new mindset. I've always been interested in doing homeschooling but didn't want to bring the regular public curriculum home. I wanted something inspiring and joyful for the kids (and me)! We already have deep spiritual study here daily...so this is perfect to incorporate academics.
mmm...mini chocolate bars. All of the food sounds goood too. When is baby boy due? Does is creep you out that your blog has been visited over 12000 times? I like how there's a utah star, a maine star, and an england star on the map.

I don't have your email...but wanted to tell you that I bought 8 tans down by Spanish Fork Golds and I think I only used 3 or 4. Do you want the rest? You just have to say your name when you go in - which is the same name as mine :) They're for the ultra bed or something like that. You just say you want to use a regular one on the account. I don't know if you ever go tanning (I've gone 3 times in the last 8 years!) and I know you're pregnant...but if you ever want to, even after your baby comes, go for it. Or pass this along to someone else :) We move in a week so I won't be using them.
